Made from blueberries grown right here on Whidbey Island. Lavender gives our tasty  jam a hint of Mediterranean culture to your eating pleasure.  Try it on scones, muffins, waffles, crackers with cream cheese or serve it as a chutney with ham.

Our jams and jellies have been developed in our own kitchen and are made with our blended culinary lavender.

Makes Scents to Me

Makes Scents for You - LavenderDeveloping new products is part of what we do, and it’s fun. We had been selling pure essential oil in a roll on for a while. It was good. But, then we became aware that straight essential oil on the skin is drying. Not so good. Enter Jojoba Oil.

Jojoba oil has some amazing properties and it is really more of a wax than an oil – but it’s liquid at room temperature. It nourishes all skin types, especially mature skin, and it penetrates readily. It is not greasy. In the 1970’s whale oil was finally banned for use in perfume products, and Jojoba has become it’s replacement. It carries scent very well.

In addition to nourishing skin and carrying the scent of essential oils well, Native Americans used Jojoba to treat sores and wounds. The beneficial qualities of this oil are huge.

With all those amazing qualities, how could we not formulate our new perfume with that as a base? So, we added a blend of our own lavender essential oils. Our first fragrance in this new line is pure lavender and we call it:

New Patio Tea Room

New Patio RoomWhat used to be a sun room with a leaky greenhouse structure has been transformed into a beautiful little room with sunshine and four tables. The french doors open to the brick patio in the back.

In the colder months it is an intimate space with bright light, warm feelings, and great coffee, tea, and baked yummies. In the warmer months it is all that plus tables outside in the lovely bricked in patio.

People can reserve all or part of the space for a special event, like these pirates.

First Anniversary

Can You Believe it?

We’ve been in our Coupeville Shop for ONE YEAR!!

It’s been quite an odyssey. First we remodeled the inside and the landscape of this charming 1916 Bungalow in the Historic Waterfront District of Coupeville. Then we moved in and started cooking. Literally! Our beautiful kitchen has churned out our products such as our lotions and soaps. We also have developed a great line of food products which we are constantly expanding. All that and running the farm, too. We’ve had a busy year!

Our staff enjoys greeting all visitors to the shop. It’s great fun to visit with old friends as well as new ones. You, our community and our customers, make our days go by quickly by bringing joy to us all.

Lavender infused Verjus!

VerjusLaunchJust released – VERJUS made from Spoiled Dog Winery’s estate Pinot Noir grapes (unfermented) infused with Lavender Wind Farm’s lavender.  A culinary delight with many uses, especially in dressings and sauces.  Verjus derives from the French term “vert  jus”, literally “green juice” and is pressed from semi-ripened high-acid low sugar wine grapes winemakers thin from the vines just before picking the grapes for wine.  Because Verjus is made from wine grapes and shares the same acid-base as wine, it is an elegant and delicate alternative to vinegar and lemon.  It is, therefore, “wine-friendly” and the secret of wine country and classically-trained chefs.

The Verjus is infused with lavender from Lavender Wind Farm.  The hint of lavender adds complexity by enhancing the flavors and also contributes to its lovely color.  This Verjus is a joint product made by two Whidbey Island businesses:  Spoiled Dog Winery and Lavender Wind Farm.  Their logos are prominently displayed on the label.  Karen Krug of Spoiled Dog Winery wanted to do something with grapes which weren’t ripe enough to make their premier wines and weren’t wasted.  Verjus was the answer – the French have known about it for years!  Karen previously talked to Sarah at Lavender Wind about infusing her lavender into their wine, however Sarah would not be able to sell the end product unless she had a liquor license.  Now there was an answer – VERJUS, because it is not fermented, a liquor license is not required to sell it, AND it is infused with Sarah’s lavender. A Whidbey Island Grown product  from two Whidbey Island businesses.

Verjus’ natural flavor enhances cooking by adding richness and complexity.  It pairs famously with wines as a salad dressing, by itself or as a simple dressing blended with olive oil.  See some recipe ideas such as Buttermilk-Verjus Salad Dressing; Arugula and Orange Verjus Salad; Roast Pork, Orange, Beet and Verjus Salad, or my favorite: Crabmeat salad with Nectarine, Verjus and Red Onion.

Use its sweet tart flavor to enhance sauces or heighten the flavor of any fish, chicken, game, red meat or vegetable dishes.  Some recipe ideas are Crispy Salmon, Spring Vegetables & Verjus Sauce; Braised Chicken with Grapes, Olives and Verjus; Slow-Cooked Lamb Shanks in Verjus or Salmon Poached in Verjus; Honey-Roasted Pear Salad with Thyme Verjus Dressing.

It also makes a refreshing drink with much less sugar than other fruit juices.  Check out recipes for  Verjus Martini; Verjus Cocktail, Verjus Mojitos or experiment with it substituting Verjus for sweet-sour juices (lime juices).  A definite receipt to try is Verjus Mint-Sorbet for those hot summer days!

Our newest products! Finally, after you have asked us for this for a long time, our version of lavender salt and lavender pepper have joined our culinary product line.

The Pepper is a simple blend to help you create amazing dishes. It combines an earthy, hot, fruity/tart, and floral flavor to dishes.  It will work well in many diverse dishes. Limited only by your imagination! Ingredients: Black, Green & White Pepper (Piper nigrum) Pink Pepper (Schinus terebinthifolius), Lavender.

 

Our Lavender Salt, which has Sea Salt and Himalayan Pink Salt, is primarily sodium chloride, some believe the trace minerals found in sea salt and himalayan pink salt as well as the reduced processing used to prepare them are desirable. Ingredients: Salt, Lavender

Bliss Bark

MichaeleneStirsWebWe have our very own chocolatier now!! Her name is Michaelene McElroy and she has only BEGUN to create some amazing treats.

In case you aren’t up on the origins of chocolate, Michaelene writes: Theobroma cacao is native to the deep tropical region of South America. Its seeds are used to make cocoa powder and chocolate. The generic name is derived from the Greek for “food of the gods”; from θεος (theos), meaning “god,” βρῶμα (broma), meaning “food.” Joseph Campbell encouraged folks to, “Follow your bliss,” and here at Lavender Wind, we’re making it easy for you to do just that by creating the first in our series of Lavender Wind Bliss Bark.
